Foreword
This Standard is the revision of GB/T 11761-1989 "Sesame". Compared with GB/T
11761 and 1989, this Standard adds mass of 1000 grains, protein content, inspection
rules, and marking. It also revises the requirements for storage and transportation.
From the date of implementation, this Standard shall replace GB/T 11761-1989.
Appendix A of this Standard is normative.
This Standard was proposed and shall be administered by the China Federation of
Supply and Marketing Cooperation.
This Standard was drafted by. China Federation of Supply and Marketing Cooperation,

Sesame seed
1 Scope
This Standard specifies sesame’s terms and definitions, technical requirements,
test methods, inspection rules, packaging, marking, storage and transportation.
This Standard applies to sesame’s quality assessment and trading.
2 Normative references
The following documents contain provisions which, through reference in this
Standard, become provisions of this Standard. For dated references, their
subsequent amendments (excluding corrections) or revisions do not apply to this
Standard. However, the parties who enter into agreement based on this Standard
are encouraged to investigate whether the latest versions of these documents are
applicable. For undated reference documents, the latest versions apply to this
Standard.

3 Terms and definitions
The following terms and definitions apply to this Standard.
3.1 Mass of 1000 grains
The mass of finished product of one thousand sesame, in grams (g).
3.2 Ratio of pure quality
The percentage - mass of net sample minus half imperfect grains TO sample
quality.
3.3 Imperfect grain
The grains which are imperfect but still have usage value, including immature
grains, worm-eaten grains, damaged grains and moldy grains.
3.3.1 Unripe gain
The grains which are immature or deflated. It is significantly different from the
normal grains.
3.3.2 Worm-eaten grain
The grains which are moth-eaten or of which the cotyledons are damaged.
3.3.3 Damaged grain
The grains which are rushed or cracked.
3.3.4 Mildewly grain
The grains of which the surface is mildewed or the cotyledons are discolored.
3.4 Impurity
The matter which passes through sieve layer and has no food value, including
matter-under-sieve and inorganic impurities.
3.4.1 Matter under sieve
The matter which passes through a sieve with 1.0 mm diameter hole.
3.4.2 Inorganic impurity
Gravel, mud, brick blocks and other inorganic substances.
3.5 Organic impurity
Sesame grains without food value, dissimilar grains and oil grains, and other
organic impurities.
3.6 Oil content
The mass fraction of crude fat in sesame.
3.7 Protein content
The mass fraction of crude protein in sesame.

(Normative)
Quality indicators of oil-making sesame
A.1 The grade of oil-making sesame shall be determined by oil content with
standard water and impurity. Quality indicators of each grade refer to Table A.1.

A.2 Pricing basis of oil-making sesame shall be based on grade 3. When the oil
content is above 52.0% or below 47.0%, price shall be adjusted according to the
actual oil content.
A.3 Health indicators. Health indicators shall be performed according to the
standards. GB 2762, GB 2763, and GB 15199.
